Cabbage and Carrots - Ethiopian Tikil Gomen

This hearty and satisfying dish works great as a main or a side dish. Serve it with sourdough for the full Ethiopian flavor profile.

1 Sweet Onion
4 Carrots
1 Small head of Cabbage
3 Cloves of Garlic
1/2 tsp Salt
4 tsp Berbere
1 tsp Garam Masala
1 tsp Cumin
4 tbs Olive Oil
2 tbs Water

Thinly slice the onion. Add the onion, 2 tbs olive oil and 2 tbs water to a large skillet. Cook over medium-high heat until the onion softens, about 5 minutes. While the the onion cooks, chop the carrots and mince the garlic. Add the carrots, garlic, salt, berbere, garam masala, and cumin. Toss to combine. Reduce the heat to medium, cover, and cook until the carrots soften, about 15 minutes, stirring occasionally.

Chop the cabbage, remove the core. Add the cabbage to the onion and carrot mixture, tossing to combine. Cover and cook until the cabbage softens, about 15 minutes, stirring occasionally. Uncover and drizzle on 2 tbs olive oil. Reduce the heat to low and simmer another 15 minutes.
